🏔️ What’s New in the 719
🍕 Denver chain coming to Colorado Springs
The Denver-based restaurant Homegrown Tap and Dough has started renovating the former Jose Muldoon’s location at 5710 S. Carefree Circle, marking its first Colorado Springs location. Known for hand-tossed pizzas and a broad local beer selection, the Gastamo Group brand already has five Denver-area restaurants and plans a late summer 2026 opening in the Springs, which will bring roughly 120 jobs to the neighborhood.
🍣 Veteran-owned Sushi Mori opens
Sushi Mori, opened late November at 4980 Edison Ave. by U.S. Army veteran Liyan Jin, offers a modern sushi experience with a long bar and artfully plated sushi and sashimi prepared by a chef with decades of experience. The menu features traditional Japanese items like nigiri, rolls, tempura and udon, and the restaurant operates daily from 11 a.m. to 9 p.m., adding a fresh full-service sushi option to Colorado Springs.
🍗 KBBQ Wings expands
The owners of KBBQ To-Go in Chapel Hills Mall have opened a second location, KBBQ Wings, at 8029 N. Academy Blvd. in the former Heirloom Bar and Grill space. This new fast-casual spot aims to make Korean-inspired wings and other quick bites more convenient for customers who wanted a dine-in option outside the mall setting.

🏔️ Trail of the Week
🌲 Lower Columbine Trail
📍 Location: North Cheyenne Cañon Park, Colorado Springs (accessed from the Columbine Trailhead near Gold Camp Road)
🛤 Length: ~1.2 miles (out & back)
⛰ Elevation Gain: ~300 ft (short but steady climb)
⭐ Difficulty: Moderate
⏱ Estimated Time: ~45 minutes – 1 hour
🔄 Trail Type: Out & back
🏞 Best For: Hiking, nature viewing, waterfall access, short scenic outings
A short but rewarding trail in North Cheyenne Cañon, the Lower Columbine Trail winds through forested canyon terrain alongside a creek and leads to the scenic Columbine Falls. While relatively brief, the trail includes rocky sections and elevation gain that make it feel more strenuous than its length suggests. It’s a popular choice for a quick hike with big payoff, especially after rain or snowmelt when the waterfall is flowing strongest.
🙏Thank you!
Thanks for tuning in everyone, hope you have a great time checking out some of these events. I’ll see you back here next week with more of Colorado Springs’ best happenings. Contact me at [email protected] if you have an event that you think would be perfect for this publication.
